
Pistachio Lamb Koftas with Mint Pesto

Ingredients

600g lamb mince

Olive oil (for cooking)

2 white onions, finely chopped

100g pistachios, chopped

2 teaspoons ground cumin

2 teaspoons ground coriander

½ teaspoon chilli powder

Fresh parsley, chopped

Fresh mint, chopped
For the Mint Pesto:

40g pine nuts, toasted and finely chopped

Juice of 1 lemon
Method
Step 1:
In a large bowl, combine the lamb mince, finely chopped onions, chopped parsley, chopped mint, cumin, coriander, chilli powder, and chopped pistachios. Mix well until all ingredients are evenly incorporated.
Step 2:
Soak large skewers in cold water for 10-15 minutes to prevent burning on the grill.
Step 3:
Mould the lamb mixture onto the skewers, shaping the mixture into oval koftas. Once shaped, place the skewers in the fridge for about 1 hour to firm up.
Step 4:
To make the mint pesto, toast the pine nuts in a dry pan until golden and fragrant. Allow to cool, then blend the toasted pine nuts, Blenders Mint Sauce, lemon juice, and Blenders Classic Dressing together until smooth. Set aside.
Step 5:
Preheat a grill or pan over medium-high heat. Drizzle with olive oil and cook the lamb koftas for about 10 minutes, turning occasionally, until fully cooked and browned on all sides.
Step 6:
Serve the cooked koftas with a drizzle of the mint pesto on top. Pair with Blenders Celery and Fennel Coleslaw for a refreshing, aromatic dish.
