Ingredients
Salmon:
- 4 x 120g farmed salmon fillets/darns
- 4 teaspoons rapeseed oil
- 2 teaspoons honey
- Salt and freshly ground black pepper, to taste
Dressing:
- 240ml Blenders Caesar Dressing
Croutons:
- 1 tablespoon butter
- 2 slices day-old bread, cut into cubes
- ½ teaspoon dried oregano
- ¼ teaspoon garlic granules
Salad:
- 1 head Romaine/Cos lettuce, torn into bite-sized pieces
- 8 slices streaky bacon
- Shaved Parmesan cheese, to garnish
Method
Step 1:
Heat 2 teaspoons rapeseed oil in a non-stick frying pan over medium-high heat until shimmering. Add salmon skin-side down. Brush with honey and season with salt and pepper. Cover and cook for 4-5 minutes.
Step 2:
Carefully flip salmon and reduce heat to medium. Cook for another 5 minutes until fish flakes easily with a fork. Remove from pan, cover, and refrigerate until very cold (at least 2 hours, or overnight).
Step 3:
For croutons, melt butter in a heavy skillet over medium-high heat. Add bread cubes, oregano, and garlic granules. Toast until golden and crisp, about 5 minutes. Remove from heat and set aside.
Step 4:
In a large bowl, add torn lettuce. Flake chilled salmon into bite-sized pieces and add to the bowl.
Step 5:
Drizzle Blenders Caesar Dressing over the salad, then top with croutons and shaved Parmesan. Serve immediately.
