
Hot Smoked Stuffed Pork Fillet with Apple & Chilli BBQ Sauce
This hot smoked pork fillet is infused with fresh herbs and citrus zest, rolled and cooked to juicy perfection. Paired with a tangy apple and chilli BBQ sauce featuring Blenders Barbecue Sauce, it’s a vibrant dish perfect for seasonal menus or BBQ specials.

Ingredients
Pork & Seasoning:
- 2 pork fillets
- 1 tbsp fennel seeds
- 1 tbsp chopped rosemary
- 1 tbsp chopped thyme
- 1 tbsp chopped sage
- 4 garlic cloves, minced
- Zest of 1 orange
- Zest of 1 lemon
- Salt and pepper, to taste
Apple & Chilli BBQ Sauce:
- 200g Blenders Barbecue sauce
- 10g crushed chilli
- 20ml apple cider vinegar
- 1 Pink Lady apple, grated
Method
Step 1:
Butterfly the pork fillets and lay them flat. Season evenly with herbs, garlic, citrus zest, salt, and pepper.
Step 2:
Roll the fillets tightly and tie securely with butcher’s twine.
Step 3:
Cook on a medium heat BBQ for 15-20 minutes, turning regularly to ensure even cooking.
Step 4:
Meanwhile, grate the apple into the Blenders Barbecue Sauce. Whisk in crushed chilli and apple cider vinegar to combine.
Step 5:
During the last 5 minutes of cooking, baste the pork fillets generously with the apple chilli BBQ sauce.
Step 6:
Remove the pork from the grill, let rest for a few minutes, then remove the twine.
Step 7:
Serve the pork sliced with the remaining BBQ sauce on the side.
